It’s been a few days since “love was in the air,” however I try to keep my love for the people in my life a daily devotion. Waking up each day with love for the people in your life, or even not in your life, is a beautiful way to start each day. For today and tomorrow, and as a continuing practice, share with someone you love or don’t even know a warm thought, a hug, or anything that will make them smile!
Now onto some healthy yumminess – this was my breakfast recipe for my Valentine!
Quinoa Protein Pancakes
*Made roughly 7 pancakes
Ingredients
- 2 Bananas
- 2 Eggs
- Few shakes of Cinnamon
- 1T Coconut Oil
- 1 C Coconut Milk
- 1 tsp Vanilla Extract
- 1 C Cooked Quinoa (roughly)
- 2 Scoops Protein Powder
- 1 – 2 C Oat Flour
- Blueberry Chia Jam
Directions
- Mash bananas. Beat two eggs, add vanilla extract to egg mixture. Pour in.
- Add coconut milk and oil.
- Add Quinoa
- Add Cinnamon
- Add Protein Powder
- Add Oat Flour
- Top with Blueberry Chia Jam (Make night before)
Blueberry Chia Jam
Ingredients
- Container of blueberries
- Fresh Lemon Juice
- 3 T Chia seeds
- Water
Directions
- In a small saucepan, boil blueberries down with lemon & water. Add chia seeds after blueberries have cooked down. Refrigerate over night.
Goal from here on out! I will write down my recipes as I am making them. I tend to just add a little of this a little of that! I will be making these again, so if the amounts are off I will update!
