Health Explosion!

I started with making different green juices yesterday, which lead to adding fresh thai coconut juice to one batch, then to blueberry coconut chia pudding, to kale/sweet potato/quinoa casserole, to grilled salmon over mashed coconut sweet potatoes for lunch, to lastly sweet potato quinoa “muffins!!” Sometimes my imagination runs wild and I just go! I hate wasting any food, so I used all my scraps to come up with different recipes. Let’s start out with where it all began: Thai Coco Green Juice!

Thai Coco Green Juice

  • Handful of Baby Spinach
  • 1 Lemon
  • Inch of ginger
  • 1 Apple
  • Bunch of Parsley
  • 1 Cucumber
  • Bunch of Mint
  • Fresh Thai Coconut Juice

  • JUICE AWAY!! Then crack open the Thai coconut and add the coconut water to your green juice!! Pure deliciousness! Save the coconut meat for making your Blueberry Coconut Chia Pudding! Any questions on what juicer to buy check out this blog —> Juicing & More!

Blueberry Coconut Chia Pudding

Blueberry Coco Chia

  • Container of blueberries
  • Left over coconut meat from Thai coconut
  • 1 Can Coconut Milk
  • Chia Seeds

  • Blend coconut meat & blueberries. Add coconut milk. Add chia seeds. Refrigerate overnight to gelatinize. Incredibly tasty! Add some banana & nuts on top to make it even yummier!

Stay tuned for my other creations!! Subscribe if you haven’t already – my love and appreciation to everyone!!!

I have to try me some chia pudding! I have chia seeds, just never really used them! Do you soak yours first? I heard this is a good way to go about preparing them.

    Thanks for the delicious-looking recipes!!

They will be soaking in the pudding, so no need to do it twice!! They are amazing and incredibly high in fiber!
